  2. Tricolor Donburi is my personal favorite because it's really easy to make with whatever ingredients you have on hand. Instead of layering it over plain rice, I'll do a basic fried rice (onion, soy sauce, a little ginger or fresh garlic, and some chopped vegetables like carrots or peas), then mix it all together when I'm ready to eat it. My boyfriend doesn't like eggs and rice, so when I made Tricolor Donburi for him I used corn instead of scrambled egg. You could probably also used scrambled soft Tofu or strips of fried Tofu. I was planning to do a Tricolor Donburi this week, in fact!
